I love Sundays. Game day. Football is very important to me. Many of my close friends are all wrapped up in Fantasy leagues and I find great pleasure in watching them squirm. For me, it's all about the game. The pride that those players march out onto the field with.

I have a chili recipe to share with you guys! Make it on a Sunday or a Monday. Enjoy!

Take 2 pounds ground sirloin and 1 pound pork sausage. Brown up. Add an onion and 6 cloves of garlic. Sweat off. You can season your beef ahead of time. It's always best to build upon flavors.

Roast off a variety of peppers. You can do this on your stove top or in your oven. I used Poblanos, Red Bells, Jalapenos, and one Habarnaro. I like spice, but you don't have to stick to what I used. Place roasted peppers in a bowl covered with saran wrap. Let them sit for a while, then peel and remove seeds. Place the peppers in a food processor and puree.



Once you have softened the onions, stir in 1/4 cup of tomato paste. Cook this out for about 2 minutes. Pour in a bottle of beer. I used Sierra Nevada. Yum. Continue to cook for about 5 minutes. Once the beer taste is gone, add in 2 and a half cups of stock! Stir in the pepper puree. Cook on low heat for 20 minutes.



Ladle chili into an oven safe bowl. Top with tortilla chips and refried beans that you have warmed up and added cheese and milk to. Top beans with a handful of cheese. Place in oven under the broiler. Keep an eye out. The chili will heat up and brown quickly.

  4. oh YUM! this looks soo good girl, especially b/c there is going to be a frost advisory where i live tonight!! i do make chili but i don't usually put in beer, gotta try that next time!

    p.s. my hubby totally squirmed over his fantasy football team haha!
