Something Simple

A simple meal goes a long way. The best lesson that I have ever learned from cooking is that less, is MORE. The restaurant I work at here in Sacramento pretty much lives by that motto. And so today I am giving you a simple salad recipe. Now, like with ANY salad, it's uber easy to mix it up. But just follow my guidelines and you'll be happy as a clam. Happy eating lovers...

Toss in a bowl:
Mixed baby greens
A little Romaine lettuce for crunch
Sliced Strawberries and Nectarines
Roasted Almonds

In a bowl:
Four tablespoons of balsamic vinaigrette
A small handful of goat cheese
A smidge of honey

Wisk Wisk Wisk together.... until creamy

Slowly add your Olive Oil (Use a blend if possible. Honestly I hate when people use really strong olive oil in dressings. The entire balance of flavors is thrown)

Add oil until your dressing is well emulsified. Add salt and fresh pepper to taste.

Drizzle your dressing over your salad and then finish with some goat cheese on top.

Super simple, Super yummy. I promise.

Shawni Marie

ps;
try and stick to local fresh organic ingredients. The farmers market on Sunday morning is my best friend. You can find EVERYTHING you need/want. Including a bag of baby mix greens for $1.00!!
